Secondary Education Department Food Passion and Communication Classroom (FCC) M.1-M.3

The FCC curriculum is based on the concept of dual vocational education, focusing on both intensive theoretical learning and practical training through assigned tasks. It incorporates the principles of food preparation, Thai cuisine, and international cuisine from both Asia and Europe. Students will also learn the art of baking and preparing snacks. They will be guided through various tasks, learning how to use kitchen tools and equipment, maintain and store ingredients, as well as troubleshoot issues in the cooking process. These skills are intended to be applied in daily life and in a professional career efficiently.

Additionally, the food program is supported by professional chefs who serve as advisors, offering guidance and recommendations for the management of teaching and learning. This is aimed at fostering students to become chefs skilled in both savory and dessert dishes, with the knowledge and capability to further their studies at a higher level.

The curriculum consists of 30% theoretical learning and 70% practical hands-on training, where students actively engage in real-world tasks.

What will students learn in the FCC program?

M1

Students will learn the basics of food preparation, Thai snacks, food service, and international snacks.

M2

The focus will be on learning skills and techniques in international cuisine and bakery.

M3

The emphasis will be on learning skills and techniques in Thai cuisine, Thai desserts, and the basic development of food products.

Career Opportunities and Further Education:

Graduates can become chefs specializing in both savory and dessert dishes.

Students will have the ability to continue their studies at a higher level, such as in the field of food and nutrition.

Graduates will be prepared to pursue further education in vocational studies related to food.

Students will also be able to pursue further education at Chitralada Technology Institute, as per the academic agreement of Memorandum of Understanding (MOU).
